This Creamy Cilantro Chicken Soup is the perfect addition to your meal rotation! This recipe was one of the very first recipes I made on my own. Putting It Together:

My favorite part of this recipe is just how easy it is to throw together! From minimal ingredients to quick cook time, this recipe is perfect for prepping, sharing, and much more. I love this recipe because it requires only one pan, a knife, a cutting board, and a spatula. The base of this soup starts with onions and celery, sautéed to enhance the flavor profile. Combined with shredded chicken and spices, it makes for a comforting yet fresh soup.

Substitutions:

As far as substitutes, although I haven’t tried myself, I’m fairly positive you could use any plant-based milk if coconut milk doesn’t work for you. If you don’t have chicken or don’t prefer it, feel free to use any other protein.

How to Store Creamy Cilantro Chicken Soup:

1. Refrigerator
Store soup in an airtight container in the fridge. It’ll stay fresh for 7 days, keeping its texture and flavor.

2. Freezing
To extend their lifespan, freeze in an airtight container or individual portions. It’ll stay good for up to 3 Months. Take out and reheat in the microwave for 2-4 minutes or on the stove until hot.

1. How much time do I want this to take – as little as possible!
From start to finish this recipe takes about 45 minutes! Considering most of the time is allocated to the pot, this recipe is super laid back.

2. Clean up can be, by far, the most labor-intensive part of a recipe – I don’t want that to be the case.
One pot, one spatula, knife, cutting board, and a few measuring cups. Thats it! My favorite way to get clean up done is while the soup is on the stove. Trust me 20 minutes is plenty of time to wash all the dishes you used!!

3. Texture is key for this soup – I want mine to be just right
The trick for this soup is to chop your veggies small so you get a bite of everything, as well as adding more seasoning to your liking.

As someone who started AIP and now follows paleo (less strict) this recipe is so amazing for when i want a warm yummy lunch or dinner. It also makes for a great freezer item so make a big batcah if you want.

Warm, creamy, and packed with flavor, this Coconut Chicken Soup is the ultimate comfort dish that combines nourishing ingredients with simple preparation. Ingredients

  • 4 Tablespoons 4 Olive Oil

  • 1 Large 1 yellow onion, diced

  • 2 cups 2 celery diced

  • 3 cups 3 Shredded chicken

  • 3 tsp 3 salt

  • 1 tsp 1 oregano or Italian seasoning

  • 1 tsp 1 onion powder

  • 1/4 tsp 1/4 garlic powder

  • 1/2 tsp 1/2 ground ginger

  • 1 1 Lime zest and juice

  • 4 cups 4 chicken broth or stock

  • 1/2 cup 1/2 cilantro

  • 1 (13.5oz) can 1 full fat coconut milk

  • 1 Avocado 1 garnish

Directions

  • To a large pot add olive oil and heat on medium heat
  • Add onion and celery, and cook until onions turn translucent.
  • Add shredded chicken, salt, dried oregano or Italian seasoning, onion powder, garlic powder, ground ginger, and lime zest. Stir the pot occasionally so that the chicken browns slightly.
  • Reduce heat slightly and add lime juice, chicken broth, and cilantro. Allow to simmer for 20 minutes.
  • to medium heat, add coconut milk and allow to come to a boil.
  • Remove from heat and garnish individual servings with avocado.
